Zutaten:
8 Forellenfilets (ohne Haut und Gräten)
4 EL Olivenöl
4 Chicoréestauden
Salz
Pfeffer
1 EL Butter
Zitronensaft
Zubereitung:
Den Chicoree in Blätter zerteilen und die großen Außenblätter in lauwarmem Wasser abwaschen um die Bitterstoffe herauszulösen. 2 Esslöffel Olivenöl in die Pfanne geben und erhitzen und die Chicoreeblätter abtropfen und anbraten lassen. Mit Salz,Zitronensaft und Pfeffer würzen und die Blätter dünsten. Herausnehmen dann auf einem Tuch ausbreiten und abkühlen lassen. Den vorbereiteten Fisch mit Salz und Pfeffer würzen und mit Zitronensaft beträufeln und der Länge nach zusammenrollen. Die Filets mit den Chicoreeblättern umhüllen und mit einem Faden fixieren. Die Filets mit dem restlichen Olivenöl vorsichtig anbraten und die Hitze reduzieren. Die Butter dazugeben und den Fisch für ca. 4 Minuten gar ziehen lassen.
